PICKLED TURKISH CARROTS
I wish to practice purple carrots which are much gamey in nutrients than orangish carrots , but whatever you have on hand is fine . Baby carrots are particularly attractive and make a not bad appetizer . If you use big carrots , they should be halved or billet so no fishgig is wider than ½ inch .

RAW PICKLED BEETS
This is an adaptation of a formula by David Chang of Momofuku . The slenderness of the beets and their crunch make them as habit-forming as white potato chips . Although it ’s potential to slice them with a knife , they amount out best if you use a mandoline .

SPICY SWEET CUCUMBER PICKLES
This is an adaptation of the house pickles serve at Gjelina in Venice , California . I always have a jar of these seat in the fridge and usually just top it up from time to time with fresh sliced cuke , keeping the same seawater . These are like spicy bread - and - butter mess and go well with just about everything . Using a mandoline makes this an wanton formula .

SIMPLE PEACH JAM
I never process jam in boiling water : I think it dilutes both the saucy color and taste of in effect looker . rather , I habituate a john I learned from Darina Allen at the Ballymaloe Cookery School : Preheat your muddle jars and lids in the oven while you prepare your electronic jamming . This technique works for all fruit jamming .
